Diablo’s Cantina Opens at Monte Carlo Resort & Casino
Bi-Level Restaurant and Open-Air Bar Offer South-of-the-Border Menu,
Extensive Tequila Selection, Live Music and Dancing Señoritas on The Strip

LAS VEGAS, November 2007 – The Light Group has expanded its portfolio of restaurant and nightlife destinations with Diablo’s Cantina, located at Monte Carlo Resort & Casino. One of the only destinations on The Strip with walk-in access from the street and an open-air dining room and bar, Diablo’s Cantina is centrally located in a bi-level, 13,000-square-foot space with two full-service bars, a walk-up frozen and specialty drink bar, live music and al fresco dining.

Combining the charm of a coastal Mexican cantina with Las Vegas’ legendary energy and excitement, Diablo’s Cantina offers a bird’s eye view of the bustling Strip from its floor-to-ceiling windows and second-story open-air bar. Diablo’s Cantina infuses old-world elements, including one-of-a-kind, hand-painted murals, vibrant colors and rustic tiles with modern amenities such as 12 large plasma televisions for sports and leisure viewing. A staff of dancing señoritas and roaming tequila shot girls are flanked by Moose-o-Libre, Diablo’s wrestling champion mascot, who performs Thursday through Saturday nights on the upstairs’ stage.

The menu features a selection of south-of-the-border favorites, including Spiced Skirt Steak Nachos piled high with all the fixings, Handmade Empanadas with roasted tomato dipping sauce, and Diablo’s Signature Three Layer Club Quesadilla stuffed with blackened steak, pulled pork, chunky guacamole and sour cream. The Diablo Death Wings, spicy chicken wings served with a smoked jalapeno blue cheese sauce, Tequila Baby Back Ribs with black pepper cole slaw and crispy onion rings, and Diablo’s “No Way Jose” 15-ounce Burger offer a unique twist on American classics. A variety of tacos, double-stuffed burritos, hot-rock fajitas and oversized desserts, including the Ultimate Brownie Banana Split with several scoops of ice cream, sprinkles and hot fudge served with sparklers, and a traditional Strawberry Short Cake with house-made vanilla ice cream, round out the menu.

Diablo’s Cantina offers more than 75 different types of tequilas, including Blanco (not aged), Reposado (aged two months to a year in oak barrels), Anejo (aged one to three years), and the rare and distinguished Reserva Anejo (aged three-plus years). A Family Flight Tasting – one-ounce shots of Blanco/Silver, Reposado and Anejo – is available for guests interested in sampling tequila’s delicate distinctions. Diablo’s also boasts a collection of frozen and specialty drinks, such as wine Sin-grias, infused tequilas, fruit and classic margaritas, including the Platinum Cadillac, an upscale version made with Grand Marnier 150th Anniversary and Gran Patron Platinum.


The fall 2007 opening of Diablo’s Cantina marks the beginning of the Monte Carlo transformation. The resort, which recently received its first AAA Four Diamond Award, combines a comfortable, welcoming atmosphere with non-stop action and excitement. Its sparkling pools, charming accommodations and friendly staff combined with a casual brew pub, the breathtaking illusions of Master Magician Lance Burton, and the AAA Four Diamond Andre’s French restaurant make Monte Carlo a destination to remember.
